White Tea
White teas are China’s rare tea treasures, harvested for only a brief period each spring. They get their name from a specific tea plant variety, as well as a particular post-harvest processing method which raises small silvery hairs on the dried tealeaves and buds. Recent research in the U.S.A. reports that white teas, in comparison to other tea, have the highest concentration of the anti-oxidant group known as “catechins”. White teas have less caffeine and a milder, less grassy flavor than most green teas.
